Ingredients

  • 1 pound egg noodles

  • 2 tablespoons olive oil

  • 1 onion, diced

  • 3 cloves garlic, minced

  • 1 pound mushrooms, sliced

  • 1 tablespoon flour

  • 1 cup vegetable broth

  • 1 cup sour cream

  • Salt and pepper, to taste

  • Fresh parsley, chopped (optional, for garnish)

Instructions

Cook the egg noodles according to package instructions in a large pot of salted water. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté until the onion is translucent, about 5 minutes.

Add the mushrooms to the skillet and sauté until they are tender and the liquid has evaporated, about 10 minutes.

Sprinkle the flour over the mushrooms and stir to combine.

Pour the vegetable broth into the skillet and stir to combine. Simmer for 5-10 minutes, or until the sauce has thickened.

Remove the skillet from the heat and stir in the sour cream. Season with salt and pepper, to taste.

Serve the stroganoff over a bed of egg noodles and garnish with fresh parsley, if desired.

Notes

If you want to make this dish vegan, you can substitute the sour cream with a non-dairy alternative such as cashew cream or coconut cream. You can also add other vegetables such as bell peppers or zucchini to this dish for extra flavor and nutrition.
