Ingredients

  • 1 lb. dried pinto beans

  • 1 onion, diced

  • 2 cloves garlic, minced

  • 1 green bell pepper, diced

  • 1 can (14.5 oz.) diced tomatoes, drained

  • 1 tbsp. chili powder

  • 1 tsp. cumin

  • 1 tsp. smoked paprika

  • 4 cups vegetable broth

  • Salt and pepper to taste

Instructions

Rinse and sort the pinto beans, then soak them overnight in water.

In the morning, drain and rinse the beans and place them in the slow cooker.

Add the diced onion, minced garlic, diced green bell pepper, drained diced tomatoes, chili powder, cumin, smoked paprika, and vegetable broth to the slow cooker. Mix well.
