Ingredients

  • 1 cup unsalted butter, softened

  • 1 1/2 cups granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • 3 1/2 cups all-purpose flour

  • 2 tsp baking powder

  • 1/2 tsp salt

In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

Add in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

In a separate bowl, whisk together the flour, baking powder, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Don't overwork the dough.

Divide the dough in half and shape each half into a disk. Wrap the disks in plastic wrap and chill in the refrigerator for at least an hour.

Preheat the oven to 350°F (180°C) and line baking sheets with parchment paper.

On a lightly floured surface, roll out the chilled dough to a thickness of 1/4 inch (6mm). Use cookie cutters to cut out desired shapes and place the cookies on the prepared baking sheets, leaving about 1 inch (2.5cm) of space between each cookie.

Bake the cookies for 12-14 minutes, or until the edges are lightly golden. Allow them to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Once the cookies are completely cool, decorate as desired using frosting, sprinkles, or other decorations.

Notes

Make sure the butter is softened to room temperature before starting the recipe. Cold or melted butter will change the texture of the dough. Don't overwork the dough, as it can become tough and difficult to roll out. Mix just until the ingredients are combined. Chill the dough for at least an hour before rolling it out. This will help it hold its shape better and prevent spreading during baking.
