Ingredients

  • 1 pre-made pie crust

  • 2 tablespoons olive oil

  • 1 large onion, diced

  • 2 cloves garlic, minced

  • 2 cups mixed vegetables (such as zucchini, bell peppers, and mushrooms), diced

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 4 large eggs

  • 1/2 cup milk

  • 4 ounces feta cheese, crumbled

  • Fresh parsley, chopped (for garnish)
