Ingredients

  • 2 cups cooked rice, preferably leftover and cooled

  • 2 tablespoons oil (canola, vegetable or peanut oil)

  • 1 onion, diced

  • 2 cloves garlic, minced

  • 1 red bell pepper, diced

  • 1 cup frozen peas and carrots

  • 2 tablespoons soy sauce

  • 2 tablespoons fish sauce

  • 2 tablespoons oyster sauce

  • 1 teaspoon sugar

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/4 cup fresh basil leaves, chopped

  • 1 lime, cut into wedges

Heat the oil in a wok or large skillet over medium-high heat.

Add the onion and garlic and sauté for 1-2 minutes, until fragrant.

Add the red bell pepper, frozen peas and carrots, and stir-fry for 2-3 minutes.

Add the cooked rice to the wok or skillet and stir-fry for 3-4 minutes, breaking up any clumps.

Add the soy sauce, fish sauce, oyster sauce, sugar, salt, and black pepper, and stir-fry for 2-3 minutes until the rice is coated evenly with the sauce.

Stir in the fresh basil leaves and cook for another 1-2 minutes.

Remove from heat and serve hot with lime wedges.

Notes

You can use any vegetables of your choice in this recipe. Adjust the spices to your taste preference. Make sure the rice is cooled before using it in this recipe to prevent it from getting mushy.
