Ingredients

  • 1 tablespoon olive oil

  • 1 onion, diced

  • 2 garlic cloves, minced

  • 8 oz. mushrooms, sliced

  • 1 cup arborio rice

  • 1/2 cup white wine

  • 3-4 cups vegetable broth

  • 1/2 cup grated Parmesan cheese

  • Salt and pepper to taste

  • Fresh parsley, chopped (optional)

Instructions

In a large skillet or sauté pan, heat the olive oil over medium heat.

Add the diced onion and minced garlic, and cook until softened and fragrant, about 2-3 minutes.

Add the sliced mushrooms and cook until they have released their liquid and are browned, about 5-7 minutes.

Add the arborio rice and stir until it's coated with the oil and vegetables, about 1-2 minutes.

Pour in the white wine and stir until it's absorbed by the rice.

Add the vegetable broth, one ladleful at a time, stirring constantly and waiting for the broth to be absorbed before adding more.

Continue adding broth and stirring for about 20-25 minutes, or until the rice is cooked al dente and the risotto is creamy.

Stir in the grated Parmesan cheese and season with salt and pepper to taste.

Top with chopped parsley (optional) and serve hot.

Notes

Arborio rice is essential to make this recipe, as it has the perfect amount of starch to create the creamy texture of risotto. Make sure to use a good quality vegetable broth, or make your own for even more flavor.
