Ingredients

  • 2 cans (15 ounces each) of black beans, drained and rinsed

  • 1/4 cup of vegetable oil

  • 1 medium onion, chopped

  • 2 garlic cloves, minced

  • 1 teaspoon of ground cumin

  • 1/2 teaspoon of chili powder

  • 1/2 teaspoon of smoked paprika

  • Salt and pepper, to taste

  • 1/4 cup of vegetable broth or water

  • 1 tablespoon of lime juice

  • Fresh cilantro leaves, chopped, for garnish (optional)

Instructions

Heat the vegetable oil in a large skillet or frying pan over medium-high heat.

Add the chopped onion and minced garlic, and sauté for 2-3 minutes until the onion is translucent.

Add the drained and rinsed black beans to the skillet and stir to combine.

Add the ground cumin, chili powder, smoked paprika, salt, and pepper, and stir well.

Using a potato masher or immersion blender, mash the beans until they are mostly smooth.

Add the vegetable broth or water and lime juice, and stir until the beans are heated through and have reached your desired consistency.

Notes

You can adjust the consistency of the refried beans by adding more or less vegetable broth or water. If you want to make this recipe spicier, add some diced jalapeños or a pinch of cayenne pepper.
