Equipment

  • Food processor or blender

  • Skillet

  • Spatula

Ingredients

  • 1 can chickpeas, drained and rinsed

  • 1 carrot, grated

  • 1/2 onion, finely diced

  • 1 garlic clove, minced

  • 1/2 teaspoon smoked paprika

  • 1/2 teaspoon cumin

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/4 cup breadcrumbs

  • 1/4 cup flour

  • 2 tablespoons olive oil

  • 8 slider buns

  • Toppings of your choice (lettuce, tomato, cheese, mayo, ketchup, etc.)

Instructions

1
In a food processor or blender, pulse the chickpeas until they're broken down but not completely smooth.
2
In a mixing bowl, combine the chickpeas, grated carrot, diced onion, minced garlic, smoked paprika, cumin, salt, black pepper, breadcrumbs, and flour.
3
Mix well until everything is combined and a dough-like consistency forms.
4
Heat the olive oil in a skillet over medium heat.
5
Using your hands, form the chickpea mixture into small patties, about 2-3 inches in diameter.
6
Place the patties in the skillet and cook for 3-4 minutes on each side, or until golden brown and crispy.
7
To assemble the sliders, place the cooked patties on the slider buns and add your desired toppings.

Notes

You can customize the seasoning to your liking by adding more or less of the spices listed. These sliders can be made gluten-free by using gluten-free breadcrumbs and flour.
