Ingredients

  • 1 cup shiitake mushrooms, finely chopped

  • 1 cup firm tofu, finely chopped

  • 1 cup bok choy, finely chopped

  • 2 cloves garlic, minced

  • 1 tablespoon ginger, grated

  • 1 tablespoon soy sauce

  • 1 tablespoon sesame oil

  • Salt and pepper, to taste

  • 2 cups all-purpose flour

  • 1/2 cup boiling water

  • 1/4 cup cold water

  • 4 cups vegetable broth

  • 1/4 cup soy sauce

  • 2 tablespoons rice vinegar

  • 1 tablespoon sesame oil

  • 1 tablespoon cornstarch

  • 2 green onions, thinly sliced

Instructions

In a mixing bowl, combine the flour and boiling water. Mix with a fork until the dough comes together. Add the cold water and knead the dough until it's smooth and elastic.

In another bowl, mix together the mushrooms, tofu, bok choy, garlic, ginger, soy sauce, sesame oil, salt, and pepper.

Divide the dough into 24 equal pieces and roll each piece into a ball. Roll each ball into a 3-inch circle.

Spoon 1 tablespoon of the filling onto each wrapper. Pinch the edges of the wrapper together to seal the dumpling.

In a large pot, bring the vegetable broth to a boil. Add the soy sauce, rice vinegar, sesame oil, and cornstarch. Stir to combine.

Place the dumplings in a bamboo steamer and steam for 8-10 minutes.

To serve, ladle some of the soup into each bowl and top with a few dumplings. Garnish with sliced green onions.

Notes

Make sure to finely chop all the filling ingredients to ensure that they fit inside the dumplings. You can substitute the bok choy with other vegetables such as spinach or kale.
