Ingredients

  • 8 rice paper wrappers

  • 8 oz. firm tofu, sliced into thin strips

  • 1 large carrot, julienned

  • 1 cucumber, julienned

  • 1 red bell pepper, julienned

  • 1 cup fresh mint leaves

  • 1 cup fresh cilantro leaves

  • 1 cup fresh basil leaves

  • 1/2 cup chopped peanuts

  • 1/4 cup hoisin sauce

  • 2 tbsp. soy sauce

  • 2 tbsp. peanut butter

  • 1 tbsp. rice vinegar

  • 1 tbsp. honey

  • 1 garlic clove, minced

  • 1/2 tsp. Sriracha (optional)

  • Water for soaking rice paper

Instructions

In a large shallow dish or bowl, soak one rice paper wrapper in warm water for about 10-15 seconds, or until soft and pliable.

Remove the rice paper wrapper from the water and lay it flat on a cutting board.

On the bottom third of the rice paper wrapper, place a few slices of tofu, followed by a small handful of julienned vegetables and a few leaves each of mint, cilantro, and basil.

Fold the sides of the rice paper wrapper over the filling and then roll up tightly.

Repeat with the remaining rice paper wrappers and filling ingredients.

To make the peanut dipping sauce, combine the hoisin sauce, soy sauce, peanut butter, rice vinegar, honey, garlic, and Sriracha (if using) in a small bowl and whisk until smooth.

Serve the summer rolls with the peanut dipping sauce and chopped peanuts for garnish.

Notes

You can customize the filling with your favorite vegetables and herbs. Make sure to slice the vegetables thinly so they fit easily into the rice paper wrappers. The peanut sauce can be made ahead of time and stored in the refrigerator for up to a week.
