Equipment

  • Large tagine or heavy-bottomed pot with lid

  • Cutting board

  • Knife

Ingredients

  • 2 tbsp. olive oil

  • 1 onion, chopped

  • 2 garlic cloves, minced

  • 1 tsp. ground cumin

  • 1 tsp. ground coriander

  • 1/2 tsp. ground cinnamon

  • 1/2 tsp. paprika

  • 1 can chickpeas, drained and rinsed

  • 2 cups vegetable broth

  • 1 sweet potato, peeled and chopped

  • 1 carrot, peeled and chopped

  • 1 red bell pepper, seeded and chopped

  • 1 zucchini, chopped

  • 1 can diced tomatoes

  • 1/2 cup dried apricots, chopped

  • Salt and pepper to taste

  • Chopped fresh cilantro for garnish

Instructions

Heat the olive oil in a large tagine or pot over medium heat.

Add the chopped onion and garlic and cook until softened, about 5 minutes.

Add the cumin, coriander, cinnamon, and paprika and cook for another minute.

Add the chickpeas and vegetable broth and bring to a simmer.

Add the sweet potato, carrot, red bell pepper, zucchini, diced tomatoes, and dried apricots.

Season with salt and pepper to taste.

Cover the tagine or pot and simmer for 1 hour, or until the vegetables are tender.

Garnish with chopped fresh cilantro and serve hot with couscous or bread.

Notes

If you don't have a tagine, you can use a heavy-bottomed pot with a lid. You can substitute other vegetables as desired, such as eggplant or butternut squash. If you don't have dried apricots, you can use raisins or dates.
